BANANA BLOSSOM SALAD (VEGETARIAN AVAILABLE)

Vietnam’s banana flower salad packs a much bigger punch than a typical plate of mixed greens.Banana flower ( think purple lumps that will later turn into bunches of bananas) are peeled and thinly sliced then mixed with green papaya, carrots, and cilantro along with chicken and a heavy-handed pour of a salty fish scause dressing and crunchy peanust.

Traditional Vietnamese cooking is greatly admired for its fresh ingredients, minimal use of dairy and oil, complementary textures, and reliance on herbs and vegetables. It is also low in sugar and is almost always naturally gluten-free, as many of the dishes are made with rice noodles, rice papers and rice flour instead of wheat.
